There is just one hiccup.all the office applications still show the old 'this product is licensed to' info with a Product ID: 11111-1-11111. Since I installed Office 365 after completely uninstalling Office 2011 and following your instructions exactly, shouldn't the 'this product is licensed to' info have changed?how can I correct that? I am going to answer this even though I haven't visited it since June. (since this is less than 4 months).
You must quit office, and restart computer, then that will update Product ID to the current install. If it doesn't quit office then rename the file (adding an extra letter) and try again. If it made no difference in operation you can most like remove it (the old file) to Trash. If when open you have to reactivate, quit again and rename file again removing the letter you added, then reopen again. Things should go back to normal.
